Skirting

We just had our Icelandic sheep sheared and are planning on sending the fleeces to a mill to be washed and processed. I started trying to skirt the first fleece but I don't know what I'm doing. I googled "how to skirt a fleece" and read up on what I need to do.
So, when I started I told myself "skirting is pulling out the parts that are too matted to use or too dirty to wash."
But I've never washed a fleece so I don't know what won't wash out.

This is the fleece after I had been skirting for a while.
I don't have a skirting table so I was doing it on a sheet on the floor.

I read that you don't want the wool from the belly because it's too matted.
Is this what it was talking about?

This fleece has a lot of vegetable matter in it. What can I do about it?
